(Honolulu, Hawaii. October 4, 2019) – Get ready for another exceptional taste sensation on Thursday, October 10, 2019 when Viaggio Honolulu welcomes Benny Madsen of Byington Vineyard & Winery to share his passion for fine wine at a five-course wine pairing dinner.
Executive Chef Rodney Uyehara and Benny Madsen will take diners on a journey through the lush regions of Italy, Alexander Valley and the Santa Cruz Mountains in a sumptuous wine-paired dinner.

Limited to fifty guests, the one-night-only five course menu will feature delicacies such as a Polpi Amuse-Bouche (a tasty braised grilled octopus salad with Tobiko Caviar and Olokai sea asparagus) paired with 2016 Alexander Valley Blanc de Blancs that will perfectly prepare the palette for the dishes that follow.

The antipasto is a house-made Lobster Ravioli stuffed with Maine lobster tossed in caper butter topped with a basil cream, served with Waialua baby carrots, and paired with a Byington favorite: the 2014 Monterey County, Liage (a crisp bright blend of Sauvignon Blanc and Viognier).

Next, Chef Uyehara presents tapenade crusted Salmon Mediterranean with sautéed tomato, anchovies, capers, baby arugula, garlic, and extra virgin olive oil. It is served with the Viaggio Vegetable Medley and paired divinely with the double Gold Winning 2014 Santa Cruz Pinot Noir.

The menu then moves on to a melt-in-your-mouth Filet di Manzo Alla Pizzaiola and filet mignon sautéed with mushrooms, peppers, cipollini onions, tomatoes, shallots, garlic and dried chili with grilled polenta pesto butter paired with an Alexander Valley 2014 Cabernet Sauvignon Reserve.

And now to the dinner’s Gran Finale you have been saving space for: Tiramisu. Lady Fingers dipped in illy coffee, layered in a creamy mascarpone and rum filling, dusted with cacao powder and paired exquisitely with the aptly named Santa Cruz Euphoria, 2014!
