VIAGGIO HOSTS EXCEPTIONAL BYINGTON WINEMAKER DINNER

(Honolulu, Hawaii. May 15, 2019) – Get ready for an exceptional taste sensation on Thursday May 23 when Viaggio Honolulu hosts its first-of-the-summer wine pairing dinner – Quando L’Italia incontra La California!

Executive Chef Rodney Uyehara has created a unique, mouthwatering, six-course menu to be paired with select wines from Byington Vineyard & Winery. As an exclusive treat, Viaggio invites you to meet Winemaker, Andrew Brenkwitz and Sommelier, Vince Robledo to take you on a journey of the senses.

Viaggio Honolulu General Manager, Gregg Fraser said, “We are delighted to bring together the outstanding flavor and vibrancy of our Italian inspired cuisine with this renowned Californian winery for those who love delicious food paired with the perfect wine”.

Limited to sixty guests, the one-night-only, six course menu will feature delicacies such as a Polpi Amuse-bouche – a tasty braised grilled octopus salad with Tobiko Caviar and Olokai sea asparagus – paired with 2016 Alexander Valley Blanc de Blanc whose tiny bubbles excite and prepare the palette for the dishes that follow.

The antipasto is a house-made Lobster Ravioli tossed in caper butter and paired with a Byington favorite – the 2014 Monterey County, Liage – a crisp bright blend of  Sauvignon Blanc and Viognier.

Taking us to the halfway point of this sumptuous meal is Salmon Mediterranean, tapenade crusted with sautéed tomato, anchovies, capers and baby arugula – paired divinely with the double Gold Winning 2014 Santa Cruz Pinot Noir.

The menu then moves on to a melt-in-your-mouth Filet de Manzo Alla Pizzaiola, with sautéed mushrooms, peppers, cipollini onions, tomatoes and shallots, paired with an Alexander Valley 2014 soft and subtle Cabernet Sauvignon Reserve.

The fifth dish (but who’s counting?) in this culinary journey is a succulent Italian Rib Eye Steak  marinated and grilled to perfection with a Madeira port wine sauce and paired with a refined, Bordeaux heritage 2014 Alexander Valley, Sofia.

And now to the dinner’s Gran Finale you have been saving space for… Chocolate Torta, a decadent almond chocolate cake with creamy white fudge, covered in a silky smooth chocolate ganache, accompanied by fresh berries, and paired with an aptly named Santa Cruz Euphoria, 2014!
